Start by using real chocolates.
Real chocolate has to be made with cocoa butter and include a certain percentage of chocolate liquor in its ingredients. Confectionery or compound products have a vegetable oil base and may or may not include cocoa butter and/or chocolate liquor in its ingredient statement.
Temper the chocolate.
Tempering chocolate is the process of heating and cooling that gives chocolate the proper gloss, hardness, and texture. This is the key to the success of our product.
Hand dip each center.
In 2024, we experimented with an automatic enrobing system as we explored ways to expand our production. After some time with the equipment, we realized that hand dipping remains the best fit for us. Today, every chocolate is once again dipped by hand, allowing us to focus on the craftsmanship and individual attention that make CherDan Chocolates special.
Package the chocolates.
After handcrafting the chocolates they are packaged and vacuumed sealed to preserve freshness and quality. From there, we freeze them to deliver the freshest possible chocolates to our customers.

Yes, you can freeze our chocolates. Freezing chocolate is a great way to extend its shelf life, especially during warm weather. However, it's important to properly prepare the chocolates for freezing to ensure they retain their quality and taste when thawed.
When freezing CherDan chocolates, it's important to wrap them tightly to prevent freezer burn and moisture from affecting the chocolate. Make sure to use airtight freezer bags or containers to store the chocolates.

How long can my chocolates be frozen?
If properly wrapped, our chocolates can be frozen for up to 1 year without compromising quality.
Should I thaw my chocolates before consuming them?
It's best to thaw the unopened chocolate boxes in the refrigerator to prevent condensation from forming on the chocolate, which can affect its texture and taste. Bring the box to room temperature prior to opening.
Can freezing affect the texture of my chocolates?
When properly frozen and thawed, our chocolates should maintain their texture and taste.
Can freezing affect the shelf life of my chocolates?
Freezing our chocolates can extend their shelf life, especially during warm weather or if you have a surplus of chocolates that you want to enjoy later.
Can I refreeze my chocolates after thawing?
It's not recommended to refreeze our chocolates after they have been thawed, as this can affect their texture and taste.
All of our chocolates contain soy and many creations contain milk. Additionally, our facility uses peanuts and tree nuts. Some of our products are gluten free. Please call to ask for details if you have dietary restrictions.
